What Is Doneness?

Remove It Early To Avoid Overcooking
Due to a phenomenon commonly known as carryover cooking, meat will continue to cook once it has been removed from an oven or grill. How long it will continue to cook itself will depend largely on its mass and the temperature at which it was being cooked.

Most importantly, whole beef, pork, lamb and veal cook should be cooked to a specific minimum internal temperature and then rest for three minutes before serving to ensure it is safe to eat.
