These Japanese knives have an extremely hard MicroCarbide powder steel core for excellent cutting edge retention and sharpness.

The Miyabi Mizu series has sharpness and quality in the forefront. Mizu is proof that a knife with world-class sharpness can also be extremely durable and even easy to maintain - and even without compromising on aesthetics and ergonomics.

The Miyabi Mizu series withstands more and is made with daily use in mind. The knife blade is made of SG2 steel with a hardness of 63 rockwells, which stays sharp for a very long time and therefore requires less maintenance. The ultimate sharpness is the result of CRYODUR ice hardening and the traditional Japanese Honbazuke grinding, which is done by hand by Japanese knife makers. The beautiful Japanese Tsuchime finish makes each and every knife unique, as the wavy sides of the knife blade are hammered by hand, according to Japanese tradition. The D-shaped shaft in Micarta is extremely durable, and ensures perfect ergonomics for many years to come.
