CrissCross Sharpening Technology: It features Chef'sChoice's perfected CrissCross sharpening technology for an extremely sharp, double bevel edge with microscopic "teeth" along the entire cutting edge. These tiny teeth provide the "bite" on the edge and work to engage and stabilize the food for effortless cutting. Diamond abrasive wheels simultaneously sharpen into and out of the knife’s edge on each side of the blade for a reliable, burr-free and razor sharp edge with a long-lasting, arch-shaped finish.

How It Works: Stage 1 sharpens the edge and sets the initial bevel using larger diamonds. Stage two features micron-sized diamonds to apply the second bevel and complete the durable, arch-shaped and super sharp polished edge that is superior to traditional edges. Stage 2 is also designed to resharpen serrated knives.
