The Messermeister Meridian Elite 10" Stealth is the latest blade length to be ground to a new thinner, more efficient cutting chef's knife. Efficiency in cutting is a blend of geometry, edge angle and steel. The thinner the spine, the more severe the distal taper (degree of thinning from spine to edge and heel to tip), the lower the edge angle (15 degrees or less), and the better the heat treat and subsequent refrigeration of the molecular structure, the more efficient the cutting power. The Stealth's spine is 2.3mm vs. our regular Meridian Elite Chef's at 3.8mm-that is almost 40% thinner!!!...Making it one sharp knife!
