Stagionello is the only curing cabinet guaranteed 100% made in Italy, patented with a rated load capacity of up to 150 kg. Our technologically-advanced system is equipped with yet another patent, Fumotic which allows our unit to not only manage cooling, heating, and air velocity, but also to produce and maintain the desired amount of humidity in a short period of time. The new control system used by Stagionello (Climatouch) contains 30 classic Italian recipes preset into its memory, which can be modified by the user. To create your own product (eg salami milano) just scroll through the list and select the recipe name and Stagionello Evo via the controller will automatically handle all production stages of that recipe. In the case of slow fermentation products (eg capicollo), even the delicate salting phase is automatically managed. Climatouch allows you to create and save custom recipes such as an old family recipe, or create salami types from other countries as well. Optional pH probe sold separately (Item 41263)

What is CLIMATOUCH?

ClimaTouch is a revolutionary management system of climatic recipes. ClimaTouch has a highly developed software dedicated entirely to traditional food processing, very intuitive and easy to use. It has an internal memory for 150 recipes, including 30 preset recipes, data-trace for HACCP monitoring, colour display 6’’ with a serial port output for PC and printers. The large display has an intuitive graphical interface with icons and messages which are easy to use, with the visualization of all phases, timing and processing of meat. It continually controls the fundamental factors: Time - Temperature - Humidity - PH - Ventilation in all the phases of: Salting - Stewing - Smoking - Drying - Curing - Air Recycle - Recovering. It is equipped with standard control of HACCP and performance of transformation, displayed on the large 6" colour LCD, with customized printing of graphs and tables. ClimaTouch is designed to be equipped with a probe for pH measurement and control, useful for quality test of traditional sausages. ClimaTouch follows you everywhere in the world, communicates with your phone or your computer microwebgate GSM / GPRS network. ClimaTouch is now considered the control and management system that is more interactive, intuitive and educational for the treatment of traditional Italian salami.

What is FUMOTIC?

Fumotic will enrich the capacities allowing both of these functions:

Smoking and Aromatization
This phase of the process uses natural liquid smoke sprayed into the cabinet with low temperature, respecting the characteristics of the products.

Humidification
Fumotic is the first patent that really controls the humidity into the cabinet and it does not require a water connection because it uses water contained in the boiler placed in a special slot. Therefore, it easily manages the humidity into the cabinet regardless of the minimum load required on the models without this option.
